Bison Cuts

T-Bone Steak - Standard thickness is 3/4 inch but can be cut as little as 1/2 inch to as large as 1 1/2 inch. Custom wrapped to your liking.
Striploin - Is a boneless T-Bone (know as the New York Strip). Standard thickness is 3/4 inch but can be cut as little as 1/2 inch to as large as 1 1/2 inch. Custom wrapped to your liking.
Sirloin Steak - Bone in steaks are about the size of a dinner platter or portion them out and they are about the size of a New York Strip. Standard thickness is 3/4 inch but can be cut as little as 1/2 inch to as large as 1 1/2 inch. Put as many steaks to a packages as you would like.
Ribeye Steak - Standard thickness is 3/4 inch but can be cut as little as 1/2 inch to as large as 1 1/2 inch. Put as many steaks to a packages as you would like.
Flat Iron Steak - Standard thickness is 3/4 inch but can be cut as little as 1/2 inch to as large as 1 1/2 inch. Put as many steaks to a packages as you would like.
Minute Steak - Are Tenderized Round Steak Filets. Standard Filet thickness is 1/2 inch. Put as many Steaks to a packages as you would like.
Tenderloin- can be left whole for a roast or cut into filets. Standard filet thickness is 3/4 inch but can be cut as little as 1/2 inch to as large as 1 1/2 inch. Put as many steaks to a packages as you would like.

Boneless Brisket -
Steak Roast - A very Lean Hip Roast from the Inside, Outside and Eye of the Round. Standard roast sizes 3-4 lb. However they can be as small as 2 lb to as large as you would like them.
Sirloin Tri-Tip -
Rib Roast - Come from the Rib Section, Can either be Bone-in or Boneless. Standard roast sizes 3-4 lb. However they can be as small as 2 lb to as large as you would like them.
Chuck Roast - Come from the Front Shoulder. Makes a Great Pot-Roast! 3-4 lb. However they can be as small as 2 lb to as large as you would like them.
Eye Of Round - Is the center of the Inside and Outside Round. Stand Size is 3 lbs

Ground Bison - All the Hamburger we do is considered Extra Lean, unless requested other wise. Stand packages size is 1 lb, 1.5 lb or 2 lb
Hamburger Patties - Patties are pure meat! There are NO additives, fillers, seasoning unless other wise requested. Should be Cooked from a Frozen Stage! DO NOT THAW!!
Stew - We do not sacrifice any good cuts for the stew, it comes from the best part of the Trim. Fully Cooked Stew is cooked and comes with gravy! Sizes for stew and fully cooked stew is 1 lb, 1.5lb, and 2 lb.
Short Ribs - Come in Regular (3 in) size, Sweet n' Sour (1.5 in) size or Individual (7in) size.
Finger Bones - The bone that comes from the Boneless Rib Roast. Should be cooked like a short rib.
Soup Bones -
